Yield: 6 to 8 servings
- 2 shallots, minced
- 2 tsp. olive oil
- 1 pound spicy Italian turkey sausage
- 1 head of celery, diced
- 1 cup carrots, diced
- 2 tomatoes, diced
- 1½ cup French green lentils
- 2 T. no-salt multi-seasoning
In large pan, sauté shallots in olive oil until translucent, about three minutes. Add sausage to pan, and sauté until browned.
Place sausage mixture and rest of ingredients in slow cooker, and mix well. You do not need to soak lentils beforehand. Cook stew on low for eight hours.
